SAT resizes tables when it detects that the tables are the wrong size. Such as if you accidentally resize a table with your mouse
Once the tables are the correct size, SAT should no longer be touching them, so I'm not sure why this is happening. You say its only Stars and Party? Can you click File->Current Layout, and paste me everything?
The other issue about 888 and GG tables being too large, is probably due to the fact that each poker client uses different scaling proportions for their tables. There is nothing much that can be done about that:
